Peas & Pancetta
Okay, listen. Not every recipe has a soft, sentimental story. The story behind this recipe is simple: I had recently published the Creamed Corn Recipe and decided I needed an above average peas recipe to compliment my above average corn recipe. Most recipes trying to spice up peas tended to add bacon, but I decided to go with pancetta and sweet onion. While the story behind this dish is simple, the dish itself is not. It is quite fantastic, in fact. As with every side dish I publish, this one is good enough to be eaten by itself, but would also be fantastic with Above Average Mashed Potatoes.

Instructions
- Dice the sweet onion.
- Over medium-high heat, sauté the diced onion in a medium-sized skillet in pure olive oil.
- Once onion begins to turn translucent, add the pancetta. Continue to stir for 3 - 4 minutes.
- Add the frozen peas and stir. Lower heat to medium-low and cover for about 10 minutes while mixture cooks.
- Uncover and add salt, black pepper, and garlic powder. Serve fresh.
